About Steak with Blue Cheese Mushroom Sauce

There are days where I really want a steak, but I don't have a grill. Honestly, I don't really know how to work a grill. I mean, I have cooked on a grill probably three times in my life, but grilling is not my personal cooking method of choice.

So instead of using a grill, I used a heavy skillet. And I felt just as satisfied with this method as I would if my steak had been grilled.

Take it up a notch by making a mushroom sauce with blue cheese. Yum!

I am a big fan of getting lots of vegetables into my life regularly, and this mushroom sauce is an excellent way to enjoy veggies.

You saute the mushrooms in the skillet that you initially cooked the steak in. So you only have one skillet to clean.

Then you add in some broth and blue cheese to make a sauce. While this is cooking, your steak is having a chance to rest.

You never want to cut into a steak right after cooking because all its juices will escape leaving you with a sad, dry steak.

Which makes the mushroom sauce a perfect addition to your steak since you can make it while your steak is resting.

Add a baked potato or another grain on the side, and you have a satisfying, delicious complete meal.

Ingredients

Steak: The cuts of meat that will work for this steak and blue cheese mushroom sauce recipe are Petite Sirloin Steaks, Rib-eye, New York Strip, Top Sirloin, Tenderloin Steak (or Filet Mignon).

Mushrooms: Any fresh mushrooms will be delicious in this mushroom blue cheese sauce. I typically use button or white mushrooms. Baby Bella or portobello mushrooms will also be tasty. If you hate mushrooms, feel free to substitute with a large onion.

Butter: The butter adds a little richness to the mushrooms, but you can also use olive oil.

Salt & pepper: These are basic but the only spices a steak needs to taste delicious.

Beef broth: Another chance to add flavor to your sauce is by using beef broth. Chicken broth or vegetable broth will also work well. If you don't have any broth, you can simply use water.

Blue cheese: Either crumbled blue cheese or a block of blue cheese that you crumble yourself will taste great in this sauce. Use gorgonzola for a less intense blue cheese flavor.

How to Make Steak with Blue Cheese Mushroom Sauce

Time needed:35 minutes.

Use one skillet to make this simple steak and mushrooms blue cheese sauce recipe.

  1. Sprinkle steak with salt and pepper, and cook in a heavy skillet over medium-high heat.

    Cook on one side until it easily releases from the skillet. Flip, and transfer to oven.

  2. Remove the skillet from the oven, and transfer the steak to a cutting board to rest.
  3. Add butter and mushrooms to the skillet.

    Cook until most of the liquid evaporates.

  4. Pour in beef broth.

    Scrape up any browned bits stuck to the skillet.

  5. Remove from heat and stir in blue cheese.
  6. Slice the steak.
  7. Transfer sliced steak to a plate, and cover with mushroom blue cheese sauce.
  8. Sprinkle with more blue cheese, and enjoy!

Recipe Tips

*Make sure your steak is room temperature. Take it out of the fridge at least 30 minutes before cooking.

*This steak with blue cheese and mushroom sauce can get a little smokey, so you might want to turn on your exhaust fan for this recipe.

*Delicious served with a baked sweet potato or regular potato, or roasted potatoes, or a cooked grain like quinoa or brown rice.

*Use a piece of steak that isn't too thick. The recipe was tested using a 1-inch thick piece of top sirloin.

*Per a reader's suggestion, a cast-iron skillet is recommended. But don't feel like you have to use one if you don't have it.

Ingredient Options

If you happen to not love mushrooms, no worries! Same if you don't love blue cheese.

Use onions instead of mushrooms. You'll want to cook them longer (about 20-30 minutes) so they get nice & caramelized. Caramelized onions are really hard to beat! But the mushrooms make things go a little faster.

If you don't love blue cheese you can use gorgonzola which is a little milder. Or try something like a Gruyere, Swiss, or even cheddar.

I wouldn't waste your time with a mild cheese like mozzarella.

How to Make Allergy Friendly

This is already gluten-free, egg-free, soy-free, and nut-free. If you need dairy-free, skip this recipe since cheese is a main ingredient.

How to Fix a Mistake

Sauce is too thick: if the sauce is too thick, add a few tablespoons of broth or water to thin it. Stir well to completely incorporate it before adding more.

Sauce is too thin: if the blue cheese mushroom sauce is too thin, you can cook it on low heat a little longer or add more cheese. This will help it thicken.

Make Ahead Ideas

This is best served immediately after preparing. To prepare in advance, you can chop the mushrooms and crumble the blue cheese. Keep in the fridge until ready to use.

Storage Suggestions

Store in an air-tight container in the fridge for up to 3 days. The sauce can be on the steak or in a separate container. Either is fine. I do not recommend freezing the mushroom blue cheese sauce.

What to Serve with Steak and Mushroom Blue Cheese Sauce

To make this a meal, I served it with a baked potato on the side. Well, I microwaved the potato, but it was just as good.

You could also serve another grain like rice or quinoa if you wanted it to help absorb some of the sauce. It'd also be really good with roasted potatoes.

If you are doing that, make sure you start roasting the potatoes before cooking the steak because it'll only take about 35 minutes to cook the steak & make the sauce.

Final thoughts

This steak with blue cheese mushroom sauce is one of my favorite recipes when I need something satisfying but incredibly simple. It's easy enough for a weeknight meal and fancy enough for celebratory meals or entertaining (increase the recipe as needed).

  • 10 ounce steak
  • 8 ounces mushrooms sliced
  • 1 tablespoon butter
  • 1/8 teaspoon pepper
  • 1/8 teaspoon salt
  • 1/4 cup beef broth or water
  • 3 ounces blue cheese crumbled
  • Preheat your oven to 425*F. Heat a heavy skillet over medium-high heat.

  • Season your steak with salt & pepper.

  • Add the steak to the skillet and cook for 2-3 minutes per side. The steak should easily release from the skillet.

  • Transfer to the oven for 5-10 minutes depending on the thickness of the steak. (Mine took 8 to get to medium, which is about 160*F)

  • Carefully remove the steak from the skillet. Remember that the skillet will be really hot, so use an oven mitt.

  • Put the skillet back on the stove and heat over medium. Add the butter and melt.

  • Add the mushrooms, and cook stirring occasionally for 7 minutes until their juices release

  • Stir in the broth, scraping up any browned bits on the bottom of the pan.

  • Simmer for 5 minutes until most of the liquid has absorbed. Stir in 1/4 cup bleu cheese

  • Slice the steak and serve with the mushroom sauce on top. Crumble the extra few tablespoons of cheese over the sauce and sprinkle with parsley if desired. Enjoy!
